A Literature Review Study on the Trend of Salt Intake in Korea


Abstract
The purpose of this study is to find the trend of salt intake in Korea in relation to some epidemiological characteristics by literature review.
@ES The results were as follows,
@EN 1. The amount of salt intake was reduced from 20-23g/day in 1960s to 10-17g/day in 1980s.
2. The higher salt intake was found for the male, in the rural area, an during the summer seasons.
3. The salt intake was gradually increased till the age of 40's and decreased after then.
4. Main sources of the sodium intake were soy sauce, soy been paste, red pepper paste, table salt and Kimchi. The rate of the discretionary sodium intake was 60-86% in most cases.
5. The sodium excretion rate was 77.4-103.1% of the sodium intake, The higher sodium excretion was commonly found in hypertension group.
The appropriate action at the individual, industrial, and national levels should be taken to reduce the salt intake. In addition, the role of hose wife for changing food habit should be emphasized.
